Can you imagine a world of baked goods without cinnamon? We can’t either. And the health benefits of cinnamon are many, including being a high source of antioxidants, protecting heart health, and blood sugar control for managing diabetes. Studies are showing that this spice may defend against cognitive decline by protecting brain functioning.

Cinnamon is actually the bark of a tree, and over 90% of the cinnamon in the U.S. is Cassia cinnamon, not Ceylon (which many people regard as “true” cinnamon) that’s lighter, softer, and sweeter tasting in comparison to its more bitter counterpart. Because it’s a bit more rare in U.S. markets, it’s a bit more expensive as well.

No matter what you're preparing, dishes taste better when you know your spices are harvested ethically and farmers are paid fair wages for their crops. Level Ground Trading works with the fair trade organization Ethical Inspirations in Sri Lanka to purchase spices from small-scale farmers, fresh off the tree or out of the ground. All are dried, ground, and packed as soon as possible post-harvest to deliver spices bursting with flavor!
