Cream of tartar powder is used as a stabilizing agent commonly in baking to stabilize beaten eggs whites for baking sponge cakes, meringues, and soufflés, for which there is no substitute! It is also used by confectionary chefs to prevent sugars from crystalizing. Cream of tartar powder is a biproduct of the winemaking process, made up of the small crystals which form at the bottom of barrels which serve to ferment the wine. The crystals are collected and refined until a white powder is produced. Comes in a .9-oz. tin.
