Fair Seas Pumpkin Spice Pie

Your fall table isn't complete without a pumpkin pie! Perfect this classic before Thanksgiving, using Fair Seas Spice Company's fresh-ground pumpkin pie spice blend!

Ingredients
2 cups of pumpkin pulp purée from a sugar pumpkin or from canned pumpkin purée
1 1/2 cups heavy cream or 1 12-oz. can of evaporated milk
1/2 cup packed dark brown sugar
1/3 cup white sugar
1/2 teaspoon salt
2 eggs plus the yolk of a third egg
1 1/2 tablespoons of freshly ground Fair Seas Spice Co. pumpkin spice blend
1/2 teaspoon of lemon zest
Your favorite crust recipe or premade pie shell

Directions

  1. Preheat oven to 425°F.
  2. Beat the eggs in a large bowl. Mix in the sugars, salt, pumpkin spice mix, and lemon zest. Mix in the pumpkin purée. Stir in the cream. Beat together until everything is well mixed.
  3. Pour the filling into an uncooked pie shell. Brush edges with milk or egg wash if desired. Bake at a high temperature of 425°F for 15 minutes. Then after 15 minutes, reduce the temperature to 350°F. Bake for 45–55 minutes more, or until a toothpick inserted in the center comes out clean. Cover edges with foil halfway through baking if crust begins to burn or brown too quickly.
  4. Cool pie for two hours. Serve with fresh whipped cream.
